Three Delicious Stuffed Pepper Recipes

Italian Stuffed Peppers

Ingredients:

  • 2-3 bell peppers
  • 1 tbsp oil
  • 1 small onion
  • 2 cloves garlic, minced
  • 1lb hot Italian sausage, casings removed
  • ¾ cup rice
  • 1½ cup vegetable/chicken broth
  • 1 cup tomato sauce
  • 2 tsp Italian seasoning
  • salt and pepper
  • 1 cup mozzarella, shredded
  • ¼ cup parmesan, freshly grated

Instructions:

1. Slice your peppers in half and make sure that you clean the inside by removing the membrane and seeds.
2. Place the sliced peppers into a boiling pot, and allow them to boil for about 3-5 minutes until they are flexible.
3. Drain the peppers from the boiling water by using a colander and set aside.
4. Next, cook the rice using broth instead of plain water and set aside once cooked.
5. Prepare a frying pan by pouring oil onto it and heating it using medium-high setting.
6. Once the oil is heated, add the onions and saute for 3-4 minutes.
7. Next add the garlic and continue sauteing for 30 seconds.
8. Throw in the hot Italian sausages in the pan and allow them to cook until the pink color is gone. Break them up into pieces by using a spatula.
9. Next add the cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Allow it to cook for about 5 more minutes.
10. Prepare your roasting dish by adding greased.
11. Begin stuffing your peppers with the rice mixture and top each pepper with shredded mozzarella and grated parmesan cheese.
12. Allow them to cook in the oven for about 15-20 minutes.
13. Serve on a plate and enjoy!

Vegetarian Stuffed Peppers

Ingredients:

  • 2-3 bell peppers
  • 1 tbsp oil
  • 1 small red onion, finely diced
  • ½ jalapeno, minced
  • 2 cloves garlic, minced
  • ½ cup quinoa
  • 1 cup vegetable/chicken broth
  • 1 can black beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 tbsp taco seasoning
  • salt and pepper
  • 1 cup cheddar, shredded

Instructions:

1. Slice your peppers in half and make sure that you clean the inside by removing the membrane and seeds.
2. Place the sliced peppers into a boiling pot, and allow them to boil for about 3-5 minutes until they are flexible.

Mediterranean Stuffed Peppers

Ingredients:

  • 2-3 bell peppers
  • 2 tbsp oil
  • 1 small red pepper, finely diced
  • 1 small zucchini, finely diced
  • 1 clove garlic, minced
  • ¼ cup kalamata olives, pitted and chopped
  • 2 cups cooked orzo/quinoa
  • 1 cup cooked chicken, finely diced
  • ½ lemon, juiced
  • 1 tbsp red wine vinegar
  • 2 tsp Greek seasoning
  • 1 tbsp fresh parsley, chopped
  • salt and pepper
  • 1 cup feta cheese

Instructions:

1. Slice your peppers in half and make sure that you clean the inside by removing the membrane and seeds.
2. Place the sliced peppers into a boiling pot, and allow them to boil for about 3-5 minutes until they are flexible.

11. Begin stuffing your peppers with the mixture and top each pepper with crumbled feta.
12. Allow them to cook in the oven for about 15-20 minutes.
13. Serve on a plate and enjoy!
